Hidden Veggie Italian Meatloaf

I think we all understand the importance of getting as much vegetables in as many varieties as you can in your diet. In fact, it's one of my top 3 tips for a healthy diet as discussed in this post.  But if you have picky eaters in your household, this might be easier said than done. 

If you struggle to get your family to eat their veggies, this Hidden Veggie Italian Meatloaf is here for you! It packs two kinds of vegetables that hide in grass fed ground beef and an Italian spiced tomato sauce. 

Aside from the perks of added vegetables, this Hidden Veggie Italian Meatloaf is super easy to pull together, making it an ideal weeknight meal you can get in the oven in a matter of minutes. Delicious served alongside a big salad and a baked sweet potato for a balanced and nutritious meal.

  • 1 pound grass fed ground beef
  • 1/2 cup green kale, finely chopped
  • 1 large carrot, finely shredded
  • 1 egg lightly beaten
  • 1 clove minced garlic
  • Sea salt and black pepper, to taste

For the topping:

  • 3/4 cup tomato sauce
  • 2 tablespoon tomato paste
  • 1 tablespoon Italian seasoning (or 2 teaspoons dried oregano, 1 teaspoon dried basil)
  • Sea salt and black pepper, to taste


  1. Preheat oven to 375
  2. In a large bowl, combine ground beef, chopped kale, shredded carrot, egg, minced garlic, salt and pepper. Use your hands to mix all ingredients until well combined. 
  3. Spread into a bread tin and bake for 30 minutes. Combine all the ingredients for the topping in a small bowl and set aside.
  4. After 30 minutes, remove the meatloaf from the oven and drain any excess grease. Spread tomato sauce evenly across the top and bake for another 15 minutes. 
  5. Broil for a few minutes before removing from the oven to get the tomato sauce a little browned and bubbly. 
  6. Let cool for a few minutes then slice and serve.
