No Bake Chocolate Almond Butter Bars

Ingredients:

For the almond butter layer

  • 3/4 cup creamy almond butter
  • 3/4 cup coconut flour
  • 1/4 cup honey
  • 2 tablespoons melted coconut oil
  • 2 teaspoons vanilla

For the chocolate ganache

  • 1/2 cup dairy free chocolate chips (I use Enjoy Life brand's mini chips)
  • 1/2 cup coconut cream

Directions:

  1. Add all of the ingredients for the almond butter layer to a bowl and thoroughly mix to combine. 

  2. Grease a small baking dish. I used a roughly 5″x5″ dish. You can use a standard 8″x8″ dish but the bars will be thinner. Use your hands to press the almond butter mixture into the dish so it is relatively smooth and even. 

  3. Heat the coconut cream in a small sauce pan over medium-low heat until it is hot, but not simmering or boiling. You should be able to hold your finger to it for a few seconds before it’s too hot. 

  4. Add the chocolate chips to a small bowl. Pour the hot coconut cream over the chocolate chips and slowly stir until smooth and the chocolate is completely melted (this will take a couple of minutes). 

  5. Pour the chocolate ganache over the almond butter layer. Cover and refrigerate for at least 3 hours so the bars can set. 

  6. Slice after the bars have hardened and serve chilled. 

*If you can’t find a can of coconut cream, you can place a can of full fat coconut milk in the refrigerator  and scoop the hard part out of the can (don’t shake the can before opening)
